These refreshing salads pair crunchy cucumber and jicama with naturally water-rich fruits for a delicious way to support hydration. Choose from a sweet-and-salty watermelon version with feta and mint or a sweet-and-spicy pineapple version with Calabrian chili, cilantro, and pistachios.

Why Jicama and Cucumber Deserve a Spot on Your Plate

Cucumber is made up of about 95% water, making it one of the most hydrating vegetables available. Its mild flavor and crisp texture make it an easy addition to salads, sandwiches, and snacks. 

Jicama is often overlooked, but this crunchy root vegetable is nearly 90% water. It also provides about 6 grams of fiber per cup and is rich in a gut-healthy prebiotic fiber called inulin. It also has a satisfying crunch and pairs great with lime!

Together, cucumber and jicama create a refreshing, hydrating base for summer dishes. Pairing them with naturally sweet, water-rich fruits like watermelon or pineapple adds flavor and juiciness while balancing the overall sugar content of the dish. The result is a refreshing fruit salad that delivers hydration and a whole lot of flavor in every bite.
